Cherry Tomato Salsa

The last of my 3 summer salads…

This is really nice served alongside BBQ chicken breasts, in a roll with a good burger, vegy burgers, fish-cakes or simply as a side salad.

Ingredients

  • 300g plum cherry tomatoes/vine cherry tomatoes
  • Half of a small red onion
  • 1 large red chilli  (larger chillies shouldn’t be to hot)
  • Juice of 1 lime
  • Handful of coriander
  • A pinch of good quality sea salt (Maldon)

Method

  1. Dice the red onion very finely.  Add to a large mixing bowl.
  2. Half the chill, de-seed and finely dice. Add to the onions.
  3. Cut each of the tomatoes in half and add to the bowl.
  4. Add the juice of the lime and a sprinkle of sea salt.
  5. Chop the coriander making sure not to bruise and add to the bowl.
  6. Combine the ingredients by scooping both of your hands underneath all of the ingredients and gently folding them together. You need to be careful not to bash the tomatoes and release all of their juices. You want to keep the salsa as dry as possible!
