
Nothing could be simpler for my choice of the best summer salad. Salata Caprese is simply sliced tomato, buffalo mozzarella, basil, olive oil seasoned with salt and pepper. The key to this salad, is good ingredients. Firstly, get a good buffalo mozzarella from your local deli. Secondly, pick good, juicy organic tomatoes, even better grow you own, all you need is a small pot and a south facing window! Thirdly, use good quality extra virgin olive oil.
- 1 Ball of Buffalo Mozzarella
- 2 Organic Vine Tomatoes
- 30-40ml Extra virgin Olive Oil
- Handful of fresh Basil Leaves
- Salt & Pepper for seasoning
- Slice tomatoes and arrange on a plate, season with salt & pepper
- Slice mozzarella and place on top of tomatoes
- Scatter dish with fresh basil leaves and drizzle with 30-40ml of olive oil and season again with salt and pepper
- Enjoy as an Antipasto
