Shortbread

Shortbread

Shortbread is a handy thing to know how to make as it can be eaten on its own or used as part of a dessert. With this recipe only using three ingredients it doesn’t get any simpler! There are lots of recipes out there that vary the ratio of butter, sugar and flour but this is the one that works for me.

Ingredients

  • 4oz butter
  • 2oz caster sugar
  • 6oz plain flour
  1. Heat your the oven to 180°C
  2. Beat the butter and the sugar together until smooth and the butter starts to look a paler colour. You can use a mixer to do this but I always do it by hand (I’ve got big muscular arms).
  3. Stir in the flour to get a smooth dough and roll into a ball then cover and leave it to chill in the fridge for about 20 minutes
  4. Once chilled dust a worktop with some flour and roll the dough until it is about 1cm thick.
  5. Using a cookie cutter cut out some shapes and place on a baking tray that has been dusted with flour. You can combine and re-roll the excess dough so you don’t waste any.
  6. Bake in the oven for 15-20 minutes, or until pale golden-brown then sprinkle with some caster sugar as soon as they come out
  7. Set aside to cool on a wire rack and then enjoy!
