
It’s creepy and it’s cooky, mysterious and spooky, its altogether ooky, my pumpkin recipe doo doo doo dooo……
Ingredients:
- 500g pureed pumpkin
- 1 carrot
- 2 cloves of garlic
- 1 red chilli
- 1 onion
- 1 red pepper
- 2 medium potatoes
- 1 tsp ground cumin
- 1 tsp cayenne pepper
- 1 tsp ground coriander
- 1.5 pints of vegetable stock
- 1/2 x 400g can of coconut milk
Serves 6
Prep: 15mins (if you already have the pumpkin puree) Cooking time: 20 mins
- Now if you’ve already made the pumpkin pie recipe you should have some pumpkin left for this soup recipe, if not follow steps 1 to 3 from here
- Keeping the pureed pumpkin to once side for the moment, chop up your onions, chilli, peeled carrot, peeled potatoes, red pepper and peel and bash your garlic cloves
- Get your soup pot out and heat up two knobs of butter, now add in the onion, garlic and chilli and cook for 5 minutes
- Then add your carrot, potatoes and red pepper with all the spices and cook for another 5 minutes
- Now its time to add your pumpkin and stir altogether before adding the vegetable stock, season and bring to the boil
- Simmer for 20 minutes
- Then blitz the soup in or with a hand blender
- Now you can add the coconut milk, now its time to taste…season a little more if you think it needs it
You can now serve up a spookily spicy bowl of pumpkin soup, with a slice of crusty bread – nomnomnom.
Enjoy, but watch out there maybe some spooks about!
