
Mmmmm, looking for something warm and hearty this weather? Well have a bash at this quick, easy and full of goodness hotpot!
Ingredients:
- 1 onion
- 2 garlic cloves
- 1 courgette
- 1 red pepper
- 1 yellow pepper
- 1 green pepper
- bunch of fresh tarragon
- 1/4 pint of vegetable stock (organic is best)
- 1-2 potatoes sliced thinly
- grated cheddar cheese
Serves: 2-3 people (bulk of the veg if you wish to serve more) Prep: 5-10mins Cooking Time: approx 30mins
- Preheat your oven to 200C (fan assisted oven) and heat some olive oil in a deep frying pan/ pot
- Bash/chop your garlic gloves and onions and saute in the pan
- Meanwhile slice the courgettes into thin circles and chop your peppers
- Add these to the pot and cook for approx 5mins then add the chopped tarragon and stir
- Now add the stock and season, then let it simmer for approx 5mins
- Slice the potatoes thinly and grate your cheese (if not already done so)
- Place the vegetables into oven dish e.g. oval pyrex and then place the potato slices neatly on the top and sprinkle with as much cheese as you’d like
- Now place the dish in the oven for 20-30mins, until its crispy on the top
- I then recommend dishing up with some lovely brown crusty bread……ENJOY!
