Shephard’s Pie with a Tomato Twist

I came home from work the other day with the plan of making some sort of mince dish for dinner.  However I realised that I had some potatoes to be using up, so instead of the usual mince n tatties, I thought I’d rustle up something a little different for a change…..

Ingredients:

  • 1 onion, chopped
  • 400g lean steak mince
  • 700g of potatoes, peeled and halved
  • 1 tin of chopped tomatoes
  • tsp paprika
  • bunch of freshly chopped parsley
  • large knob of butter

Prep:  15mins  Cooking time: approx 45mins   Serves: 4

  1. Heat some olive oil in a large pot and cook the chopped onions for 5mins
  2. Then add your mince and brown
  3. Now add the chopped tomatoes, tomato puree, paprika and stir
  4. Season well and add the chopped parsley
  5. Let this cook for 15-20mins
  6. At this point pre-heat your oven at 190 degrees
  7. Then in another pot, boil your potatoes for approx 15min or until tender
  8. Once the potatoes are ready, drain then return to the pot and mash adding a good knob of butter and seasoning
  9. Place the cooked mince into an over proof dish and top with your mashed potatoes
  10. Drizzle your mash with some olive oil, season and sprinkle with some parsley
  11. Then put in the oven to cook for 25-30mins, until the top is golden brown
  12. Then serve up a good helping and enjoy either on its own or with some tasty green veg of your choice!
