
Posh 'Roll and Sausage
This is a really easy quick snack that is a play on the classic West of Scotland “roll and square sausage”. The mix of textures and flavours bring a really contemporary twist that really works and it makes a great alternative breakfast option or a quick bite for lunch.
Ingredients
- two square steak-slice sausage (from your local butcher not the supermarket)
- Two plain medium sized tortilla wraps
- One head of little gem lettuce
- Tomato ketchup
- Good quality balsamic vinegar
- Twist of black pepper
Prep time: 5 mins. Cooking time: 10 mins. Yield: Serves 1. Make sure you use good quality thick and sticky Balsamic vinegar – this is essential.
- Grill or fry the square sliced sausage.
- Chop and wash the lettuce.
- When the sausage is cooked, place the tortilla wraps in the microwave and cook on high for 30 seconds.
- Use a gas ring and throw the tortillas on it for 10 seconds each side (or use a cooks’ blowtorch).
- Spread ketchup thinly on one side of each tortilla and fold over to create a half circle shape.
- Place the sausage on the closed wrap, pile lettuce on top, drizzle with the balsamic vinegar and add a twist of pepper.
- Fold over to create a 1/4 circle filled sausage wrap.
